In its driest sense counting leads to a co-ordinated beginning. This however is not the whole story, counting off is what a band member does to make sure the musicians start to play at the same time, The Beatles had fun with it, The Ramones couldn't have done without it, and The Clash used it to great effect, The countdown famously applies to a rocket launch. The device of counting adds such a sense of drama and anticipation.
